I have been using the Mercato manual pasta maker for over 10 years now. I had had a lot of success with it making fettucini & ravioli and rolling sheets for, tortellini, lasagna and spaghetti.
TIP: just wipe clean... don't immerse it in water.
If you are in a commercial kitchen then I highly recommend the Imperia Electric Restaurant Pasta Machine. You will spoend a fewdollars but you will be amazed at how much pasta you can churn out. |
